The present invention relates to kimchi including beef brisket broth and a manufacturing method thereof, and more specifically, to kimchi manufactured with a recipe for making kimchi including a beef brisket broth extracted by using beef brisket and kelp and to a manufacturing thereof. Kimchi according to the present invention is manufactured with a recipe for making kimchi including beef brisket broth and thus gives plain and tasty flavors, thereby allowing growing kids and foreigners to enjoy without repulsion.
