PROBLEM TO BE SOLVED: To produce a superfine powder whole-grain flour product.SOLUTION: A superfine powder processed whole-grain wheat flour has the whole nutrition value of wheat grains and keeps texture of polished wheat flour and an appearance similar to that of polished wheat flour. A process for producing products producible from the superfine processed whole-grain wheat flour is provided and is also available in production of a superfine powder processed coarse-grain fraction which is usable as a replacement or in fortification of polished wheat flour. The superfine powder processed coarse-grain fraction is usable in bakery, snacks and food products. Availability of the process in various types of grains is also provided.
