PROBLEM TO BE SOLVED: To provide an edible inkjet ink composition having excellent color fastness, decoloration resistance and stability by using a pigment as a coloring material.SOLUTION: There is provided an edible inkjet ink composition containing persimmon juice and an edible pigment, and the content of the persimmon juice is preferably 5 to 42 wt.%, the edible pigment is diiron trioxide of 0.4 to 5 wt.% in the composition and having an average particle diameter of 20 nm to 3 μm. The inkjet ink composition is aqueous. |
