<p>The present invention relates to a manufacturing method of yellow tea jelly which ferments tea leaves to be a middle of green tea and tea, produces yellow tea from which catechin components having the bitter astringent taste of green tea is removed, and adds sweet potato starch to yellow tea. The manufacturing method comprises the steps of: (a) collecting the tea leaves from green tea trees; (b) drying the tea leaves collected from step (a); (c) crushing the dried tea leaves with hands; (d) fermenting the crushed tea leaves and roasting the fermented tea leaves; (e) inputting the roasted tea leaves into hot water at a ratio of 0.5 - 1 weight % of roasted tea leaves to 99 - 99.5 weight % of hot water and brewing yellow tea in hot water ; (f) inputting the mixture of yellow tea infused from step (e) and sweet potato starch at a ratio of 88 - 92 weight % of yellow tea to 8 - 12 weight % of sweet potato starch into a heating container, and stirring and boiling the mixture to be thick porridge; and (g) inputting the thick porridge jelly into a molding vessel, and cooling and molding the jelly.</p> |
