PROBLEM TO BE SOLVED: To provide a method for forming a vanilla extract including exposing uncured vanilla beans to high temperature for drying, extracting the beans with solvent, and treating the extract with beta glucosidase enzyme so as to enzymatically transform glucovanilline to vanilline, thereby obtaining a vanilla extract having a complicated and well-balanced fragrance of vanilla lacking in undesirable off-notes, with an excellent yield of vanilline.SOLUTION: Uncured vanilla beans are crushed and incubated in an environment at about 65°C to about 120°C for drying for about 5 to 24 hours, such that the water content is reduced to less than 10%. The dried vanilla beans thus prepared are then pulverized or chopped into small pieces. The dried vanilla beans or an extract thereof is incubated with beta glucosidase enzyme for transformation of glucovanilline to vanilline. The dried and pulverized vanilla beans are then extracted with solvent. |
