A method of preparing a frozen food product comprises applying to or coating the underside 5 of the food portion with an edible hygroscopic material such as a mixture of dried tomato and dried paprika. Before coating 5, a solution of reducing sugars may be applied 3 to the top surface prior to the application of grill marks 4. The product is then frozen 6 using nitrogen freezing, applying water 8 to the bottom or underside of said frozen food product. A glaze may also be applied 7 to the product which is preferably a frozen poultry or fish, the fish being moulded or natural. The product is packaged 10 in a tray with a corrugated surface. |
