<p><P>PROBLEM TO BE SOLVED: To provide a method for producing S-3-(hexan-1-ol)-L-cysteine from S-3-(hexan-1-ol)-glutathione by a biological conversion. <P>SOLUTION: The method for producing S-3-(hexan-1-ol)-L-cysteine from S-3-(hexan-1-ol)-glutathione includes the following steps. (A) The step of incubation-treating the S-3-(hexan-1-ol)-glutathione in the presence of a bacterial strain selected from microorganisms belonging to the genus Lactobacillus or a prepared material of its cultured cells, and (B) the step of isolating the S-3-(hexan-1-ol)-L-cysteine from the incubation-treated liquid. <P>COPYRIGHT: (C)2011,JPO&INPIT</p> |
