本发明之课题为提供蛋白质含量多的粒状植物性蛋白质素材,其比起以往更柔软、容易食用。;本案发明发现:在制造粒状植物性蛋白质素材时,藉由于原材料中添加特定乳化剂并利用双轴挤制机等进行挤制成形,即使蛋白质含量多,仍能获得吸水时柔软、容易食用的粒状植物性蛋白质素材,而解决了课题。;The inventors discovered that, when producing granular plant-based protein materials, by adding a specific emulsifier to the raw materials and performing extrusion molding using a twin screw extruder or the like, a granular plant-based protein material which not only had a high protein content, but was also soft upon absorbing water and easy to eat could be obtained, thereby achieving the above object. |
