摘要 <p>The invention relates to a device for determining the liquid or semi-solid food viscosity. According to the invention, the device consists of a parallelepipedal metallic plate (), which, in the lower right side, has a heating-cooling system () with thermostatic control which consists, in its turn, of a Peltier element () laterally and bottom-coated with a thermal insulation () and at the upper side it being in contact with a plate () made of copper sheet, for the heat accumulation and the increase of the rate of transfer towards the parallelepipedal metallic plate () whereon the food () to be investigated is spread, as a film or a thin layer, the shear strain thereof being carried out with another mobile parallelepipedal metallic plate (), horizontally drawn by means of a gauged weight (), a wire frame () and a nylon thread () wound, by means of two turns, on a wheel () mounted, in its turn, on the axle of an incremental rotation sensor () of high resolution, used for determining the shear speed and the distance run by the mobile parallelepipedal metallic plate (). The said device also comprises a Michelson interferometer () with laser for measuring the thickness of the investigated food film and a mirror () glued onto the mobile plate () and used for reflecting the laser radiation of the Michelson interferometer ().</p>
