The characteristics are a molecular weight of 11,000Œ1000, an optimum pH (which is calcium-dependent) of 4À8 at 37‹ C., a thermal stability which is also calcium-dependent, a tendency to degrade starch into units of 6 glucose residues, the ability to attack the cycloheptamylose system in some #- dextrins, and a specified electrophoretic mobility.
