The present invention provides a processed meat product with excellent marbling and soft flavor which is produced by a process of uniformly spreading an oil-and-fat composition for processing meat containing animal fat, a specific emulsifier, phosphate, starch, gum, yeast extraction powder, refined salt, and water as a meat processing composition on meat, thereby being applied to all kinds of meat products, especially to frozen and distributed meat products including beef, port, and chicken for improving the outer appearance and taste. |
