<p>PROBLEM TO BE SOLVED: To provide an alcoholic beverage which is not restricted by the light quantity regulation in the Liquor Tax Law and retains the original cask aroma and cask color obtained by cask maturation and its production method.SOLUTION: A method of producing an alcoholic beverage comprises preparing 'koji'(malted rice), preparing yeast mash by mixing the koji with yeast and water and fermenting the mixture, washing, immersing and digesting materials to prepare a main raw material, mixing the main raw material with the yeast mash and fermenting them to form 'moromi'(unrefined sake), distilling the 'moromi' to obtain unprocessed sake, maturing the unprocessed sake obtained by the distillation in a cask and adding additives, e.g. the dietary fiber dextrin, to the matured unprocessed sake.</p> |
