<p><P>PROBLEM TO BE SOLVED: To provide a steam cooking apparatus for heating broth and cooked material contained in a treatment tank with saturated steam, and stirring them while adjusting the strength of stirring. <P>SOLUTION: The steam cooking apparatus has the treatment tank 1 having a pressurized interior, a steam supply control unit 7 for controlling steam supply into the treatment tank, an exhaust control valve 9 for controlling the discharge of steam from the treatment tank, and an operation control device 13 for controlling the operation of the steam supply control unit and steam discharge control valve based on the temperature and pressure in the treatment tank, and the steam cooking apparatus houses the cooked material 5 made of a solid material and liquid broth in the treatment tank, and introduces steam into the treatment tank to heat the food material. In the process of steam cooking in which the treatment tank is maintained at a predetermined steam cooking temperature to cook the food material, pressurized stirring operation is operated in which the pressure in the treatment tank is temporarily increased relative to the pressure of saturated steam at the steam cooking temperature, and then the temperature is reduced to the original steam cooking temperature, thus part of the food material is boiled to stir the food material. <P>COPYRIGHT: (C)2012,JPO&INPIT</p> |
