The present invention suggests a method for significantly reducing the content of 4-methylimidazole, a carcinogen included in a caramel colorant without changing the color of the caramel colorant. According to the reducing method of 4-methylimidazole from a caramel colorant suggested in the present invention, gamma rays are irradiated to the caramel colorant at 3-100 kGy radiation in order to reduce the content of 4-methylimidazole, which is produced as a byproduct in a manufacturing process of a caramel colorant and included in the caramel colorant, without changing the color of the caramel colorant. |
