<p>PROBLEM TO BE SOLVED: To provide a shelf-life extending agent for foods, having excellent bacteriostasis, with original acid taste being suppressed.SOLUTION: The disclosed shelf-life extending agent for foods contains calcium acetate and organic acid. Compared with a conventional shelf-life extending agent or a pH regulator mainly composed of sodium acetate, proliferation of fungus in foods and deterioration of the foods can be suppressed with a lower addition amount. In addition, acid taste is suppressed with use of the shelf-life extending agent, so that impact on the taste inherent to food material itself can be reduced to minimum level.</p> |
