The invention relates to a jelly beans composition and to a process for preparing the same. According to the invention, the composition comprises 2.5% energizing mixture, 51.53% sugar, 32.49% glucose, 1.96% pectin, 1.66% citric acid, flavours and colours. The process, as claimed by the invention, consists in preparing the pectin solution to which sugar syrup and glucose syrup are admixed and the mixture is heated to a temperature of 116...118°C and a pressure of 4...5 bar, after the syrup tempering, the energizing mixture and the citric acid being admixed in batches and the resulting composition being finally poured into jelly bean forms. |
