<p>PROBLEM TO BE SOLVED: To provide an automatic bread baking machine capable of baking a greatly expanded hard bread with good taste.SOLUTION: In an automatic bread baking machine, communication and shield switching means 30 for switching between a communication state and a shield state between an upper space and a lower space in a baking chamber 17 is provided vertically above a heater arranged inside the baking chamber 17. Electricity is applied to a heater 4 in the shield state at the beginning of a baking process to quickly raising a temperature of only a lower part of a bread container, whereby, before an upper part of a bread dough 31 is dried and hardened by heating, water vapor is generated in the bread dough 31 to break a film between bubbles and connect the bubbles to form a large bubble. Consequently, the bread dough 31 is greatly expanded and inside of the bread dough 31 can be cooked well. Subsequently, the communication and shield switching means 30 is switched to the communication state, whereby heat of the heater 4 is spread throughout the baking chamber 17 to evenly cook the whole bread. As a result, the automatic bread baking machine is provided which can make a greatly expanded hard bread with good taste.</p> |
