PROBLEM TO BE SOLVED: To provide a transparent hard candy which can be made at low cost, not mainly from sugar, having approximately the same stickiness after water absorption as that of a hard candy including 50 wt.% starch syrup and 50 wt.% sugar, capable of being formed by stamping.SOLUTION: The transparent hard candy is composed of starch syrup or starch syrup and sugar, with an amount of the starch syrup for use of 90 to 100 wt.%, and an amount of the sugar for use of 0 to 10 wt.%. The saccharide composition includes: (a) 1 to 15 wt.% monosaccharide; (b) 55 to 80 wt.% disaccharide; and (c) 10 to 30 wt.% trisaccharide or higher saccharide; and satisfies: (a)+(b)+(c)=100 wt.%. The hard cady has approximately the same stickiness after water absorption as that of a hard candy including 50 wt.% starch syrup and 50 wt.% sugar, capable of being formed by stamping. |
