The present invention relates to an electronic shelf server, a method of operating the electronic shelf, and an electronic shelf system using the same. The method for operating the electronic shelf system according to an embodiment of the present invention is performed in an electronic shelf server which receives product information from a central server and provides the product information to a plurality of electronic shelf tags located at a specific local area. The method of operating the electronic shelf comprises: receiving layout data on a plurality of tag layouts from the central server and storing the data; providing the product information for a first product to a first electronic shelf tag, when a product allocation request for the first product is received from a manager terminal which allocates the first electronic shelf tag; and providing list information for the tag layouts to the manager terminal and providing the layout data for the first tag layout selected by the manager terminal to the first electronic shelf tag.
