The present invention relates to a method of preserving frozen tuna, and, specifically, to a method of preserving frozen tuna, which injects carbon monoxide into a bag having a frozen tuna therein, and seals the bag. The method for preserving tuna according to the present invention comprises a step of cutting frozen tuna; a step of defrosting the cut frozen tuna; a step of separating fish flesh from the defrosted tuna; a step of putting the fish flesh in a bag, injecting carbon monoxide to the bag, and sealing the bag; a step of aging the fish flesh in the bag; and a step of cooling and preserving the fish flesh in the bag. |
