摘要 <p>PROBLEM TO BE SOLVED: To provide a mead in which an alcohol concentration is raised, and heavy taste of honey is modified to adjust to alcoholic beverage and Sake, and pleasant and easiness to drink are performed while flavor remains.SOLUTION: A mead production method includes: a saccharification step for saccharifying rice malt for Sake; a lactic acid fermentation step in which a raw material during the saccharification or after the saccharification is added with a lactic acid bacterium to perform lactic acid fermentation; a saccharification rice derivation alcohol fermentation step in which the raw material during the lactic acid fermentation or after the lactic acid fermentation is added with ferment to perform alcohol fermentation; and a second alcohol fermentation step in which honey with a prescribed concentration is added during a first alcohol fermentation step or after the first alcohol fermentation step to perform further alcohol fermentation.</p>
