摘要 PROBLEM TO BE SOLVED: To provide (1) a method for introducing hydroxy group into an aromatic compound having a substituent, to provide (2) a method for converting two molecules of aromatic rings into a condensate through a carbon-carbon single bond by reaction with an aromatic compound having a hydroxy group in an aromatic ring in the aromatic compound having the substituent, and to provide (3) a method for introducing the hydroxy group, then introducing a double bond, and thereby converting flavanones into flavones in relation to the flavanones in the aromatic compound having the substituent with good efficiency using a live cell such as Escherichia coli in which CYP110 is synthesized. SOLUTION: The methods for producing the aromatic compound include steps of: making a protein belonging to the family 110 (CYP110) of cytochrome P450 or a fusion type protein containing the protein function as a monooxygenase; carrying out the reaction with the aromatic compound having the substituent; and introducing the hydroxy group into the aromatic ring or carbon atom of the substituent.
