Soluble alkaline earth and magnesium salts of acid esters of citric acid with polyhydric alcohols are made by heating citric acid with a polyhydric alcohol containing at least three hydroxy groups, the reaction being interrupted when at least one carboxyl group per molecule of citric acid remains in the free state, and then forming the alkaline earth or magnesium salts. The water liberated in the esterification may be removed by stirring or passing air or indifferent gas through the mixture. In examples salts are prepared from the acid esters obtained from citric acid and mannitol, sorbitol, and glycerol. |
