The present invention relates to a method for producing a reshaped fried snack, which is capable of frying a large, crispy fried snack in a short time, and a frying mechanism used in the method. According to the present invention, the method for producing a reshaped fried snack comprises: a kneading step of mixing raw materials including grain powder and kneading the mixed raw materials with hot water; a pellet extrusion molding step of extruding the paste to form pellets; a pellet drying step of drying the molded pellets; a liquid sugar coating step of coating the surfaces of the dried pellets with liquid sugar and drying the dried pellets; and a reshaping and frying step of putting a plurality of pellets coated with the liquid sugar in a porous fry basket capable of opening and closing, and frying the pellets in boiling oil such that the pellets can be fried while being swollen and the surfaces of the pellets coated with the liquid sugar can stick to one another, thereby forming a fried snack having the shape of the fry basket. |
