The present invention relates to a method for manufacturing oat noodles, which enables general consumers to take abundant nutrition contained in the oats and to enjoy the distinctive flavor of the oats with an easy cooking of the oat noodles by manufacturing the noodles using the oats. The method comprises: a soaking process of adding salt to hot water and soaking unpolished raw oats in the hot water; a heating process of heating the water to which the raw oats and the salt in the soaking process are added; a separating process of grinding the raw oats processed in the heating process, and filtering, separating and removing, with a sieve, hard endodermis from embryos of the raw oats together with a curing substance and fiber included in the grinded product; a ripening process of kneading the embryos of which the hull is removed and which is grinded, through the separating process, and ripening the paste for 3-4 hours at 25 degrees Celsius; a noodle making process of extruding the paste subjected to the ripening process with a noodle-making machine to make noodles; a re-heating process of steaming the noodles processed in the noodle making process for 15-20 minutes to reheat the noodles; and a cooling and drying process of cooling and drying the reheated noodles. |
