MANUFACTURING METHOD OF CHEESE POWDER, CHEESE POWDER, AND FOOD PRODUCT CONTAINING CHEESE POWDER

PROBLEM TO BE SOLVED: To provide a manufacturing method of cheese powder having a rich flavor of cheese and a singe flavor generated when cheese is burned or singed.SOLUTION: Paste or slurry of a cheese composition is prepared by mixing cheese and one or more kinds of saccharides selected from monosaccharides and oligosaccharides and homogenizing the mixture. The obtained cheese composition is dried by a drum drying method and ground to manufacture cheese powder. Preferably, 1-10 pts.mass of the saccharides is added to 100 pts.mass of a solid part of the cheese. Preferably, the saccharides contain monosaccharides.
