PROBLEM TO BE SOLVED: To provide a method for manufacturing a food product in noodle form having good texture and going down smoothly, in a short time.SOLUTION: The method for manufacturing a food product in noodle form includes: a molding step of molding a raw material including at least alginic acid into a noodle form so as to obtain a material in noodle form; a first gelation step of gelatinizing the material in noodle form with a first aqueous solution which contains calcium ions and magnesium ions so as to obtain a gelatinized material in noodle form; a second gelation step of gelatinizing the gelatinized material in noodle form with a second aqueous solution which contains calcium ions so as to obtain a food product in noodle form. The concentration of calcium ions in the first aqueous solution is larger than the concentration of calcium ions in the second aqueous solution. |
