An apparatus is designed for removing an animal carcass or portion of an animal carcass from a gambrel. The apparatus removes the carcass in a controlled manner, 5 and is suitable to pass the carcass on to further processing devices. The apparatus can be adapted to suit a variety of different styles of gambrels. Figure 1
