An anchovy simmering and drying tray according to the present invention comprises: a frame; a net body which supports the edge of the frame, includes a concave-convex part formed along a length direction or a direction vertical to the length direction, and has multiple through-holes formed for drainage; and an interplot which compartmentalizes the domain of the net body into two or more sections. The anchovy simmering and drying tray according to the present invention uses a plastic material which does not discharge harmful materials, so that harmful materials are not discharged therefrom even when anchovy simmering is repeatedly performed. Moreover, the anchovy simmering and drying tray according to the present invention can prevent the gathering of anchovies when being simmered through the interplot. Both simmering and drying can be performed. The surface area that contacts anchovies to be dried is minimized through the net body having the concave-convex part having the shape of a square wave, a sine wave, and a triangle wave, so that drying efficiency is improved. By means of the interplot, anchovies to be dried can be uniformly distributed throughout the overall surfaces of the tray, so that the anchovies can be uniformly dried. |
