The present invention relates to a manufacturing method of a natural tuna spice using tuna byproducts, which manufactures natural spice providing tuna flavors by adding an enzyme and various compounds to tuna byproducts such as bones, intestines, head, etc. of tuna so as to decompose protein components of the tuna byproducts. The natural tuna spice of the present invention is used as an additive of canned tuna or prepared food to add the characteristic taste and flavor of tuna, improve the quality of processed tuna food, and increase the added value by recycling tuna byproducts. |
