The present invention relates to a smoking apparatus and a smoking method using smoke and heat from a charcoal kiln. The smoke at high temperatures, a subject for civil complaints, is reused. Therefore, not only energy efficiency can be increased but also civil complaints can be addressed. The smoking apparatus includes: the charcoal kiln (C); a heating chamber (130) which takes the smoke in to perform a smoking process; a switching valve (V1); an exhaust flue (S5); and a hot and cool air device (120) which supplies hot or cool air to a joining flue (S4).
