An oyster mushroom cultivating method and a culture media composite for cultivating oyster mushrooms according to the present invention enables the cultivation of oyster mushrooms using a culture media composite made of processed red ginseng residues such as red ginseng sludge which are freely provided, thereby cultivating oyster mushrooms of a high quality while reducing the economic burden to farms; reducing expenses for an electricity charge and personnel expenses required for untangling waste cotton; solving a problem of processing red ginseng sludge by recycling red ginseng sludge which a red ginseng processing company has to process; and enabling the utilization as a culture media by providing the nourishment of red ginseng sludge to a culture media capable of cultivating oyster mushrooms having a high quality.
