摘要 Automatable production of raw sausage, comprises: supplying the meat parts or meat pieces as feed material; coupling a drying container in the crushing- and mixing-room (14); portioning the predried, volume-reduced products; forming the product or sausage meat within the water-impermeable foil and suspending until reaching the isoelectric point in the product of a compression treatment; subjecting sausage meat situated in the foil; and suspending the preformed sausage meat blanks to a high pressure treatment, obtaining foil envelopment, undergoing a drying step and processing. Process for automatable production of raw sausage by crushing (5) and mixing meat parts or meat pieces as well as addition of starter cultures or spices, comprises: supplying the meat parts or meat pieces as feed material over a transport-, preferably multiple piston-cylinder system separately recoverable from crushing at the driving end to the crushing- and mixing-room depending on the productivity or the crushing, where the supply takes place in such a way that a folding over, an increase in temperature and a damage of the feed material are avoided; coupling a drying container in the crushing- and mixing-room, which receive interchangeable adsorbents, to absorb water or water vapor from the treating product; portioning the predried, volume-reduced products available in loose structure or filling the weighed out product to a foil bag or reaching on a bottom foil, further applying an upper foil and removing the enclosed air; forming the product or sausage meat within the water-impermeable foil and suspending until reaching the isoelectric point in the product of a compression treatment; subjecting sausage meat situated in the foil during the ripening phase of a tempering, to control the activity of the microorganism responsible for the ripening process; and suspending the preformed sausage meat blanks to a high pressure treatment for inactivating the microorganisms, obtaining the foil envelopment, undergoing a drying step and processing.
