摘要 The present invention relates to a dried persimmon sauce for a pork cutlet and a method for producing a dried persimmon port cutlet using the same. More specifically, the method comprises the steps of preparing a dried persimmon sauce including pulverized onions, Worcester sauce, tomato ketchup, soy sauce, salt, trimmed pineapples, and trimmed dried persimmons; preparing a Chinese matrimony vine extract; scattering the Chinese matrimony vine extract, salt, and pepper onto pork for a pork cutlet in order to be seasoned for 20-60 minutes; producing a pork cutlet patty by sequentially coating flour, egg wash, and bread powder on the seasoned pork meat; frying the produced pork cutlet patty in oil of 180-200°C; putting dried persimmons on the fried pork cutlet patty; and pouring the dried persimmon sauce on the pork cutlet patty on which the dried persimmons are put. By means of the present invention, the flavor of an overall pork cutlet is improved by using the pork cutlet patty with a dried persimmon sauce for a pork cutlet and a Chinese matrimony vine extract. Also, Korean angelica, ginko, jujubes, and ginsengs are included in the patty for a pork cutlet so that the pork cutlet includes various nutrients and the health of customers can be maintained.
