The invention relates to the food industry, in particular, to production of lyophilized meal concentrate. Proposed method suggests that after finishing lyophilisation process meal concentrate has been matured for 24 hours in the temperature from +2 °C till +6 °C. As a result smoothing of residual moisture in meal is provided.
