The present invention relates to a powder for manufacturing food, used in manufacturing food and comprising grain powders, an ionized calcium agent, and thickening polysaccharides and a method for manufacturing food using the powder. According to the present invention, when food like noodles, rice cake and so on is made by mixing the grain powders with the ionized calcium agent and modified starch, as the thickening polysaccharides, food components are uniform and concentrated since the ionized calcium agent reacts with starch, gluten, and protein contained in the thickening polysaccharides and grain powders. The powder of the present invention keeps the glutinosity and natural texture of the food by preventing water penetration into the food so as to prevent the food from being swollen up for a certain amount of time even if boiling or steaming the food and increases digestibility by inhibiting bacterial growth. |
