PROBLEM TO BE SOLVED: To provide isolation and purification method of components of whey, especially 3'-sialyl lactose.SOLUTION: There is provided a method of isolating and/or purifying the desired component, sialyl lactose from whey including following processes, a process of separating a protein concentrate and a whey transmitted product by applying the whey to ultrafiltration, a process of contacting the whey or the whey transmitted product with at least one pair of ion exchange resins where the pair contain a first weak acidic cation resin, a first weak basic anion resin, a second strong acidic cation resin and a second weak basic anion resin for deionization of the whey transmitted product, a process of contacting the deionized whey with two more or final ion exchange resins containing the strong acidic cation resin and subsequent weak basic anion resin to incorporate the desired component such as sialyl lactose into the last anion resin, and a process of eluting sialyl lactose from the last anion resin. The sialyl lactose is 3'- or 6'-sialyl lactose. |
