Producing a malt, comprises: (a) providing a malting raw material, preferably a grain including barley or wheat; and (b) treating the raw material, preferably grain with lactic acid bacteria of the strain Lactobacillus coryniformis, preferably Lactobacillus coryniformis subsp. coryniformis (DSMZ strain no. 20007), or Lactobacillus backii (DSMZ strain no. 18080) or with a mixture of lactic acid bacteria of the strains. An independent claim is included for use of lactic acid bacteria of the strain Lactobacillus coryniformis, preferably Lactobacillus coryniformis subsp. coryniformis (DSMZ strain no. 20007), or Lactobacillus backii (DSMZ strain no. 18080), or a mixture of lactic acid bacteria of the strains for producing a brewing malt.
