METHOD FOR PRODUCTION OF TREHALOSE FROM SUCROSE USING COMBI-CLEAS

The present invention relates to: a method for producing a cross-linked enzyme complex which produces trehalose from sugar; a cross-linked enzyme complex which is produced by the method; and a method for producing trehalose from sugar, which includes a step of making the cross-linked enzyme complex react with sugar. The trehalose producing method according to the present invention is able to produce trehalose from sugar by using amylosucrase (AS), a maltooligosyltrehalose synthase (MTS), and an immobilized enzyme which is made from maltooligosyltrehalose trehalohydrolase (MTH), glucose aldehyde, and bovine serum albumin. The enzyme catalytic activity of an immobilized enzyme combi-CLEAs can be reused without a change of a performance process, and therefore, can be usefully used in an industrial bioconversion which needs a multistep enzymatic reaction, since thermal stability is high.
