The present invention introduces sweet potato mayonnaise using liquid sweet potato extract which maintains the unique taste and flavor of sweet potatoes and is made by enzyme-decomposing the fibrin of sweet potatoes and liquefying the fibrin and a method of manufacturing the sweet potato mayonnaise. The sweet potato mayonnaise contains: oily part in which soybean oil and seasoning oil are homogenized and mixed; and watery part in which sweet potato extract, sorbitol, refined salt, concentrated soy protein, soy sauce powder, xanthan gum, salted egg yolk in which 10 wt% of refined salt to egg yolk is added, albumen, and fermented vinegar are homogenized and mixed. The amount of the soybean oil in the oily part accounts for 65% of the total weight. The sweet potato extract in the watery part accounts for 23% of the total weight. The method of manufacturing the sweet potato mayonnaise includes a sweet potato preprocessing step, a sweet potato extract producing step, and a sweet potato mayonnaise producing step to manufacture the sweet potato mayonnaise. |
