STORAGE METHOD OF PAINTED MAPLE SAP USING SODIUM SULFITE

Disclosed is a method for storing Acer pictum subsp. mono (mono maple) sap using sodium sulfite, whereby the growth of microorganisms is suppressed, thereby improving quality and storability of the mono maple sap. To achieve such, the present invention provides a method for storing mono maple sap, comprising: a filtering step of filtering mono maple sap using a microfilter; a preservative adding step of adding sodium sulfite to the mono maple sap passed through the filtering step; and a storing step of storing the mono maple sap passed through the preservative adding step. According to the present invention, high-quality agricultural and marine products can be produced since a non-heating sterilization manner using the food preservative and the filtration through the microfilter is applied to keep the taste and flavor intact.
