PURPOSE: A manufacturing method of germinated brown rice with increased contents of vitamin C and taurine compared to general germinated brown rice is provided. CONSTITUTION: Unpolished rice is immersed in immersion liquid containing vitamin C and taurine. After the immersion, the immersion liquid is replaced with germination liquid containing vitamin C and taurine, and the unpolished rice is germinated. After germination, germinated brown rice itself or with a mixture of cereals a weight ratio to 1:1, is coated with a coating solution containing taurine. 0.1-3 weight% of vitamin C and 0.1-3 weight% of taurine are included in the immersion solution or the germination solution, respectively. Immersion and germination processes are performed for 24-48 hours at 25-35 deg. C. The cereals may be selected from Cynanchi radix, unpolished rice, glutinous rice, bean, and adlay. 1-5 weight% taurine is contained in the total weight of coating solution. The coating process is performed for 30-100 minutes, in the speed of 100-200rpm at room temperature. |
