The present invention addresses the problem of providing technology for stably maintaining dispersibility in a polar solvent of a particulate substance that is: an inorganic substance, i.e., a hardly soluble mineral that is used in food and beverages such as calcium carbonate, a pigment such as titanium dioxide, yellow iron oxide, red iron oxide, or carbon black, or cement; or an organic substance, i.e., an azo pigment such as acetoacetic acid anilide or pyrazolone, a phthalocyanine pigment such as copper phthalocyanine, or a condensed polycyclic pigment such as anthraquinone or quinacridone. A water-soluble pea polysaccharide exhibits excellent dispersing ability of each type of inorganic and organic particulate substance and makes it possible to solve the abovementioned problem. |
