PROBLEM TO BE SOLVED: To provide a method and an apparatus for vacuum packaging which can deaerate the inside of a packaging bag sufficiently without hindrance and prevent residence of air bubbles within the packaging bag after vacuum packaging even when an object to be packaged contains liquid.SOLUTION: A vacuum packaging method is used to vacuum-package an object to be packaged containing a liquid of a high temperature higher than ordinary temperature with a packaging bag B and includes a packaging pressure reduction step of reducing the pressure of the inside of a chamber 2 down to a second set pressure P2 set preliminarily, closing an object charge inlet Ba in the chamber 2 and reducing the pressure of the inside of the chamber 2 with the object charge inlet closed to a third set pressure P3 lower than the second set pressure P2, a closing release step of releasing the closed state of the object charge inlet Ba in the chamber 2 after the packaging pressure reduction step, and a sealing step of closing the object charge inlet Ba again after the closing release step and sealing the object charge inlet Ba of the closed state so as to vacuum-package the object to be packaged. |
