PROBLEM TO BE SOLVED: To provide a hydrous chocolate-like food product made from soybean material, which is smoothly meltable in the mouth and has a rich taste and flavor with sufficient shape retention.SOLUTION: The hydrous chocolate-like food product, which is smoothly meltable in the mouth and has a rich taste and flavor with sufficient shape retention, can be prepared from a raw material emulsion composition of soybeans having a lipid content (i.e. a chloroform/methanol mixed solvent extract content) of 100 wt% or more relative to the protein content, preferably from a raw material emulsion composition of soybeans having a protein content of 25 wt% or more relative to dry material, a lipid content (i.e. a chloroform/methanol mixed solvent extract content) of 100 wt% or more relative to the protein content, and an LCI value of 55% or more. |
