The apparatus has a frame (1) for delimiting a cutting zone (4), and a trough (5) for introduction of food to be cut e.g. Julienne, where the trough is arranged interdependent of the frame. A cutting tool (10) is movable with regard to the frame in the cutting zone according to a reciprocating motion in a cutting plane. A cutting unit is located in the cutting zone with regard to the trough. A pressing shoe is arranged on a side of a complementary cutting tool (11). The shoe has a bevel tilted from main cut stops (28) in a direction opposed to a working direction (F1).
