The present invention addresses the problem of producing a novel batter material which can be used in a form suitable for a "water dissolution method" that is achieved usually with high yield, and has a good crispy texture at the same level as those of batter materials for a "dredging method" without adversely affecting the flavor and color of the batter material. A swollen material is prepared by mixing starch with calcium and magnesium and kneading the resultant mixture using a kneader. A portion of the material which has a specific gravity and a particle size each falling within a specified range is used as a "water dissolution" batter. In this manner, a non-conventional crunchy and crispy texture of the batter material can be achieved without adversely affecting the flavor and color of the batter material. |
