Provided are a rolling apparatus for varying the thicknesses of a metal material, and a rolling system and a rolling method therefor capable of providing a metal material with partially various thicknesses and strengths for a component manufacturing field or various materials in addition to a blank for hot stamping, minimizing collision properties and lightening a vehicle body, and obtaining a partially reinforced blank for hot stamping by manufacturing a metal material to partially vary thickness by a rolling process. The rolling apparatus for varying the thicknesses of a metal material comprises: multiple upper rolling rolls which are installed on an upper side of a route on which the metal material moves and are arranged along a width direction of the route; lower rolling rolls which are arranged to correspond to each lower side of the upper rolling rolls and are installed on a lower side of the route; and a thickness varying unit which partially varies the thickness of the metal material rolled by adjusting a distance of the lower rolling rolls corresponding to the upper rolling rolls.
