The present invention relates to a method for producing dried radish leaves using a fermenting enzyme, comprising: a step of washing harvested radish leaves; a step of cleaning the washed radish leaves via ultrasonic cleaning with an ultrasonic generator; a step of boiling the ultrasonic cleaned radish leaves in water; a step of drying the boiled radish leaves; a step of inoculating the dried radish leaves with lactobacillus; a step of inserting the lactobacillus inoculated radish leaves in a half-vacuum wrapping paper for fermentation and sealing the wrapping paper in half-vacuum; and a step of fermenting the radish leaves in the half-vacuum state. According to the present invention, the half-vacuum state can be consistently maintained in the long term, the unique color and taste of the radish leaves can be maintained, and a soft and excellent texture can be presented without being crumbled. |
