The present invention relates to a method for extracting the omega 3 of sturgeon according to nucleic extractive conditions comprising: a material measuring process of measuring nucleic acids and sturgeon; a primary mixing process of mixing measured raw materials at 40°C for 4 hours; a filtering process of filtering mixed raw materials in 100 mesh; a concentrating process of removing nucleic acids remained in a filtrate; and a secondary mixing process of mixing sludge and refined oil in a condensed solution. The present invention has an effect capable of conveniently extracting the omega 3 of sturgeon in nucleic extractive conditions which are optimal conditions for commercializing sturgeon developed as a regional specialization item in a Hamyang-gu office.
